3 iced tea recipes to dazzle the taste buds

Thai Coconut Iced Tea

Looking for flavours that remind you of the beach? Here’s a refreshing drink you can make in under 10 minutes that is enjoyable at any time of day, but especially on hot, sunny afternoons.

These proportions make 2 servings.

Ingredients

  • 2 cups of water
  • 2 tea bags (Oolong tea is preferred but you can use a black tea of your choice)
  • 2 tbsp of granulated sugar 
  • 1 cup full-fat coconut milk
  • ice
  • lemon wedges and fresh mint, for garnish, (optional)

How to make it

  1. Steep tea in boiling water for about 5 minutes. Remove tea bags.
  2. Add sugar to your steeped tea and stir until dissolved.
  3. Fill two large glasses with ice.
  4. Divide the tea into each glass pouring over the ice.
  5. Before opening your can of coconut milk, give it a good shake to combine the cream and milk.
  6. In each glass, pour 1/2 cup coconut milk over the tea.
  7. Stir and garnish with lemon or sprigs of mint if desired.

Pineapple Hibiscus Tea

Here’s a simple summery iced tea recipe you can make in under 10 minutes that is both gluten-free and vegetarian. This recipe makes 1 serving, but you can easily increase the proportions to entertain a crowd.

Ingredients

  • 1/4 cup hibiscus tea
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • 1/2 cup Dole pineapple juice

How to make it

  1. Stir together tea, pineapple juice, lemon juice and honey in a glass. (Increase proportions and use a pitcher for multiple servings)
  2. Add ice cubes, if desired.

Lemon Blueberry Mint Iced Tea

This is a deceptively easy iced tea recipe you can make in under 20 minutes. However, you will want to make this ahead of time and chill for a few hours before serving.

All you need are a few simple ingredients including tea, blueberries, sugar, lemon juice, and mint.

Ingredients

  • 2 cups fresh blueberries
  • 9 cups water, divided
  • 1 cup sugar
  • 1 lemon (plus more for garnish)
  • 1 bunch fresh mint (plus more for garnish)
  • 6 tea bags

How to make it

Blueberry syrup

  1. Wash and dry blueberries.
  2. Roughly chop mint.
  3. Bring blueberries and 1 cup water to a boil, lower heat, and cook for about 5 minutes or until blueberries begin to burst.
  4. Add sugar, the juice from 1 lemon, and chopped mint. Simmer for 2 to 3 minutes or until sugar has fully dissolved.
  5. Remove from heat. Steep about five minutes, then strain solids through a sieve. Let it cool.

While you’re making the blueberry syrup, steep your tea.

  1. Bring 8 cups of water to a boil. Remove from heat, add tea bags, and steep for 10 minutes, pushing the tea bags down every couple of minutes. Discard tea bags. Let cool.

Then, combine blueberry syrup and tea in a pitcher and chill for 4-6 hours.

Garnish with blueberries in the pitcher, lemon slice and mint in the glass, if desired.
